  1. Peel and boil the potatoes in salted water until tender.
  2. Let cool slightly, then pass through a vegetable mill — or mash very finely.
  3. Set a pan over low heat and add the potato.
  4. Top with the cold butter and press it down with a silicone spatula.
  5. Massage the potato with the spatula until the butter melts in. It shouldn’t melt from the heat alone.
  6. Add salt, pepper, and nutmeg; stir.
